How do you do the "double clutch" on the Fiat 500 with unsynchronized transmission?

In this very interesting video we can rediscover a way of driving that is as old as the car that the youtuber is driving: the "double clutch" (i.e. shifting gears) on a Fiat 500 with a non-synchronized gearbox. If we start, we turn the key and pull the choke and then start with the lever on the right. We leave the choke pulled for a few minutes, to let the car warm up. Starts must always be gentle. The double clutch is done like this: clutch - neutral - gas - clutch - gear. The most delicate moment is the transition from third to second gear, and it must be done at a certain speed. Here the youtuber also does the famous "heel/toe" technique, which means braking with the toe and accelerating with the heel: something that could be done on these old cars that had pedals very close together.
