You can modify the clock displayed on the instrument cluster of the Seat Ibiza by turning on the ignition, inserting the key into the ignition barrel. Once the dashboard is powered, press the button with the rectangles in the centre of the cluster.

The hours will start to flash and can be adjusted using the 0.0/SET button; pressing the button with the rectangles again will cause the minutes to flash, which can be adjusted in the same way.
