Thanks to this brief video guide, we can see how to reset the service light, which indicates the oil life remaining, on a Seat Leon produced from 2012 to 2019. First, with the vehicle completely off, press and hold the "0.0/SET" button on the speedometer, then turn on the ignition.

This will display a request to perform the reset, so release the button and press it again, holding it for about twenty seconds.

Finally, turn off and restart the vehicle to check the reset was successful.
