For example, let's analyse 195/55 R16 91H: 195 is the tread width expressed in mm; 55 is the aspect ratio in percentage relative to the tread width; R stands for 'radial', 16 is the diameter of the rim expressed in inches; 91 is the load index, while the letter H is a speed rating.

There are tables available online that have no reference, they should only be consulted. The manufacturing date is contained in a small oval and consists of 4 digits: 0623 indicates the week and year, so the sixth week of 2023. If there is no writing, as in this case, the tyre is summer XL meaning 'reinforced'. M+S indicates a all-season tyre, while the mountain with three peaks indicates a winter tyre.
