How do you change the date and time on a 2016 Seat Ibiza?

To change the date and time on a 2016 Seat Ibiza, sit in the driver's seat, turn on the ignition (you don't need to start the engine) and look at the display between the two dials. On the right lever (the one for the windshield wipers), at the tip there is a button: press it until the option "Settings" or similar appears.

Enter the menu using the same button and scroll until you find "Time and date". Once there, use the controls to adjust the time first, then the date. Confirm each step with the button.

When you're done, exit the menu and you're all set. It's a bit like setting the clock in the living room, but with a pilot's touch.
