Replacing the thermostat on your Peugeot 207 is a slightly complex operation, but which you can easily carry out at home with a little manual dexterity. The first step is to remove, by unscrewing the appropriate screws, both the air filter case and the plastic water tank. Now, arm yourself with patience, and take off all the water pipes by removing the clamps and being careful not to force them too much. You will now see the thermostat attached to the engine block with two bolts, which can be removed using a wrench. You can remove the thermostat and its gasket and place the new one by greasing the gasket with red high temperature thermal sealant before placing it and screwing the thermostat into its housing.
