To reset the partial odometer of the Cupra Formentor, you need to turn on the instrument panel by inserting the ignition key into the corresponding slot: then you can navigate the menu using the touch controls of the central screen. You will need to select the option with the gear icon and then "Infotainment": at this point you can reset the partial odometer by selecting "Reset partial odometer" and responding with "Yes" to the confirmation message that will appear afterwards. Finally, you can turn off the instrument panel.
