To replace the gear knob on a Peugeot 207, simply grasp the piece and pull it upwards to remove it from the end of the lever. Once the knob is removed, detach the clips securing the leather gaiter to the base of its housing.

This will allow you to lift and completely remove the gaiter. At this point, position a new gaiter, securing it to the base with the appropriate clips and at the end with a tie wrap, then insert the new gear knob.
